Roasted Tomato Sauce

This is one of the loveliest way to indulge with a good crop of home grown tomatoes.

It’s beautiful served with pasta, on bread as brushetta, on blinis as canapes, the list goes on…

It’s lovely warm out of the oven or can be stored in a sterilised jar in the fridge for a while (make sure you top it up with oil so that the tomatoes are covered).




1 kg Tomatoes, quartered lengthways

4 Garlic cloves, quarted lengthways

100 ml Oil (Rapeseed or Olive)

2 tsp Balsamic vinegar

2 tsp sugar

Salt & pepper


Combine all the ingredients in a roasting tin and slow roast for 1 1/2 – 2 hours at 120C.
