Mrs White’s Brown Rice Salad

You know when you have a pot luck supper or a bring and share BBQ? Well, my friend’s mum always made this fab Rice Salad, she gave me the recipe over ten years ago and I’ve still got the scrap of paper that I scribbled in down on….. It’s just a salad, but I’d be happy with it as a main meal!

Ingredients:

Generous servings of:

  • Cooked Brown Rice
  • Chopped Green Pepper
  • Sliced Spring Onion
  • Cashew Nuts
  • Raisins

Dressing (now this is important):
2 Cloves of Garlic (chopped)
2.5 cm Fresh Root Ginger (grated)
2 tbsp Olive Oil
3 tbsp Soy Sauce
1 tbsp Lemon Juice
Ground black pepper

Method:

  1. Mix the dressing ingredients in a jam jar, give it a shake (with the lid on!).
  2. Mix the salad ingredients together.
  3. Stir the dressing through the salad.
  4. Hope you like it!
