Bubble and Squeak

We have a joke in here at Hen Corner that it’s so-called as the bubble is in the pan as it cooks and the squeak comes about an hour after you’ve eaten it!

Again, an ideal dish with leftovers as the star, great with cold cuts the next day after a roast or simply as a snack with pickles in front of the fire…

 

Ingredients:


A selection of cooked vegetables such as:

Potatoes, Parsnips, Carrots, Sprouts, Cabbage, Sweetcorn, Peas, Onions, Swede,  Beans, Broccoli, the list goes on….

Note: You do need to make sure that there’s enough potato to hold it together, you may need to boil up some more if you’re a bit low on that one… every thing else is fine in whatever quantity!

Additional ingredients:

100g Plain flour

2 Eggs

2 tbsp Milk

Salt & Pepper

Fat for frying in (goose fat or dripping is great, alternatively olive oil)

Method:

  1. Chop the vegetables into small pieces (so they can cook at the same speed), place in a large mixing bowl adding extra mash potato if needed. Mix well.
  2. Sprinkle the flour over the vegetables and season with salt & pepper. Mix again.
  3. Beat the eggs and add to the vegetable mixture, folding it through to ensure all is well combined, add the milk if needed for a thick dropping consistency.
  4. Drop tablespoons of the mixture into hot fat or oil and gently fry in a griddle pan or large frying pan.

A lovely addition to this recipe is to mix in some small cubes of cheese before cooking… this will melt and transform this dish to a substantial main course!
